Jam made in the microwave? Really?
Yep really! I adore jam, I’m sort of in that category of Joey in Friends when he just eats jam with a spoon from the jar. Don’t get me wrong I love it on toast, scones, croissants, bagels, bread, literally any baked good is better with jam.
Anyway, while I love it, I don’t really make it from scratch because I don’t have the time. But my mum gave me this method for making it in the microwave and you know what, it’s pretty good!
Use any berries you fancy for this one.
Ingredients
1lb Mixed Berries (I used strawbs)
1lb Jam Sugar
Sterilised Jar
Method
Mix the fruit in a bowl with the sugar. Mash it if you prefer a smoother type of jam, or leave some of the fruit intact if you like more texture.
Put in the microwave on high for around three/four mins. Remove from the microwave and give it a very thorough stir.
Put it back in again for another three/four mins, and stir again
Finally put it back in for a further two/three minutes.
Carefully take it out of the microwave as it will be very hot.
Pour into some prepared, sterile jars like a Kilner jar. Allow to cool and then put in the fridge to help it set.
Hey presto, you’ve got yourself pretty yummy microwave jam! The consistency will be a bit runny, but after it sets it will be more sturdy, but not overly thick either. Perfect for a hot scone!
